#ThirstyThursday: Blackberry Thyme Champagne Sparkler

We’ve been a little goofy with our fall #ThirstyThursday picks leaning heavily into more than one “are they kidding” cocktail over September (no we weren’t kidding, some of those were both tasty and humorous) but we thought let’s get back to a more “us” place with our cocktails.  This beauty of a champagne cocktail with blackberry and thyme is from Effortless Chic and is the perfect simple beauty for a little gathering of friends say before a dinner party as a passed cocktail



  • 1 c. blackberries + 8 more for garnish
  • 1 c. Water
  • 1 c. sugar
  • 1 bottle of champagne
  • 4 ounces or 1/2 c. gin
  • 4 long sprigs of thyme
  • 1 c. ice
  •  gold baking sugar for the rim


To make blackberry syrup, in a small saucepan, bring blackberries, water, and sugar to a boil.  Reduce heat and simmer for 10 minutes Prepare cocktails adding 1 ounce of gin to each champagne glass.  Next drop two blackberries in each glass, followed by 2 ounces of homemade blackberry simple syrup. Fill the rest of the glass with champagne and top with a sprig of thyme in each glass. Thanks Effortless Chic for this great recipe and picture!
